Gluten Free Apple "Cake"


I have a ton of frozen apples and wanted to make something with it. This is apple cake. It is really a great bread, put into a pan and called "cake". You could frost it if you want but I chose to put powder sugar on it. At first I sprinkled it with what I thought was powder sugar but turned out to be rice flour.. YUCK. So I blew as much as I could off and topped it heavily with powder sugar. Well, I hit it out of the park with this one.. it was DELICIOUS and was still moist and wonderful 2 days later!
3/4 cup of rice flour
1/2 cup potato starch (not flour)
1/4 cup tapioca flour
3/4 tsp xanthan gum
1 tsp baking soda
1 1/2 tsp baking powder
1 tsp cinnamon
2 tsp vanilla
1/2 cup butter
3/4 cup white sugar
2 Tbls honey
3 Tbls brown sugar
2 Eggs
3 Tbls Milk
1 1/2 cups apples. Cubed, shreaded or otherwise.
Icing of your choice
Preheat oven to 350. Grease 9 inch springform pan or 8 inch cake pan. In medium bowl whisk together all dry ingredients EXCEPT sugars. In mixer bowl cream butter until smooth. Add egg and continue to beat. Add both sugars and beat well. Blend in the milk. Beat flour in slowly until fully incorporated. When mixed well take off of mixer and fold in apples. Pour batter into greased pan and cook in oven for 40-45 minutes (mine took way over 55 minutes) until a toothpick comes out clean in the center. Let cool and top with what ever you please. Powder sugar was awesome.. Cream cheese frosting would be AMAZING!
