Gluten Free Master Muffin Mix


Throw away all other muffin recipes and this will be your go to recipe from now on. We were up before 5am due to tornato sirens and after all was clear I figured what a better time to make muffins :) I found this on celiac.com and can't wait to try other variations.
Basic Mix
1/2 cup brown rice flour
1/2 cup white rice flour (all i had was white rice flour so that is what I used)
1/4 cup Tapioca flour
1/4 cup Potato Starch
1/4 cup Flax seed meal (I didn't have so used soy flour)
2/3 cup sugar (would like to see how honey or maple syrup works)
2 tsp baking powder
1 tsp baking soda
1 tsp xanthan gum
1/4 tsp salt
1/3 cup shortening
To this you need to add:
1 cup something wet (sour cream, yogurt, banana, etc)
2 eggs
Variations
Banana Chocolate Chip
Use 1 cup mashed banana for the wet ingredient and add chocolate chips if desired
Blueberry
Use 1 cup of sour cream for the wet ingredient and add blueberries
Apple Cinnamon with Crumble Top
Use 1 cup plain yogurt for wet ingredients. 1 cup apple cut into small chunks add in cinnamon with dry ingredients. Crumble - 1 TBLS butter or substitute. brown sugar, cinnamon, almond meal and a little gluten free flour. Mix and put on top.
Basic procedure for all muffins is mix dry ingredients with shortening until texture of coarse meal. Add wet ingredients and beat on medium speed for 3 minutes. It will be thick like cake batter. Mix in your variations. Scoop into muffin cups or greesed muffin tins. Bake at 350 for 20-25 minutes. These were amazing!!!

Gluten Free Mexican Fried Ice Cream

This was a trial recipe.. but we loved it. I am sorry because this was a dump and pour type thing so I will do my best.

Take an ice cream scoop and scoop out a ball of ice cream. Freeze for a few hours.
Dump some rice chex into a blender and blend to the size you want. Add Cinnamon and Sugar. Blend. I taste tested along the way to see when I thought there was enough. When ice cream is hard roll into chex. Drizzle with honey and sprinkle some more chex on top. We LOVED it and the leftovers were wonderful as well. When I recreate it I will figure out more definate measurements. I have leftover chex mix and will use that again another day.

Gluten Free Zucchini Bread

This bread comes out very moist and stays that way for days!

3 eggs
1/2 cup white sugar
1/2 cup brown sugar
1 cup agave nectar (maple syrup works too or just white sugar)
1/4 cup canola oil
1/4 cup applesauce
1 tsp vanilla
1 1/2 cup cornstarch
3/4 cup rice flour
3/4 cup tapioca flour
1 Tbls xanthan gum
1 Tbls cinnamon
1 Tbls baking powder
1 tsp baking soda
2 cups zucchini (I used my Ninja to grate it up...used frozen zucchini and still worked)

Preheat oven to 350. Beat the eggs until foamy, adding sugars, oil , vanilla and applesauce. In a seperate bowl mix the dry ingredients and then add to egg mixture. Beat for about 3 minutes until blended. Add zucchini and mix until blended. Pour into two (I only had one so used one and it turned out HUGE.. would not reccomend it!) greesed bread pans. Cook for 50-60 minutes or until knife comes out clean. ENJOY!!!!

Gluten Free Homemade Meatball Hotdish





It is MAY and FREEZING outside. I had meatloaf on the menu for tonight but decided to change it up. I made a hotdish to warm our bodies up! This was easy and very tasty!


Meatballs

1lb ground beef
1/2 cup of bread crumbs (Used frozen rolls I made a few weeks back.. chopped them up in the Ninja.. LOVE my Ninja.. $39.99 at Target!)
Sprinkled in some garlic garlic and onion onion from Tastefully Simple.
1/4 cup Parmesian Cheese
1 egg
Throw in any seasonings you may like.

Mix together. I used a cookie scoop from Pampered Chef to make uniform sized meatballs. Cook in a casserole dish that has olive oil on the bottom for 10-12 minutes.

Cooked up some gf spagetti noodles just until they were done. Rinse with cool water and drain. Place some of the meatballs on the bottom of a new casserole dish, placed the noodles on top of the meatballs, pour desired spagetti sauce over noodles and meatballs and add additional meatballs on top. Place shreaded mozzarlla cheese on top (which I put in the Ninja also and shreaded) of all of it. Bake in oven set at 425 for 30 minutes or until warmed. This was very good!!

Gluten Free Chocolate Cake

Isn't that a beautiful thing?? I have been trying to find a gluten free cholcoate cake recipe that would work for my daughters 3rd birthday party and that EVERYONE would eat. Well I think this is it. I am not a huge cake fan but this is pretty darn good. Moist, nice texture, fluffy and great chocolate flavor. Paired with my mother in laws frosting recipe.. I think it is a keeper!

3/4 cup white rice flour
1/2 cup tapioca flour
1/4 cup potato starch
1/2 cup cocoa
1/ cup sugar
1/2 tsp salt
2 tsp baking soda
1 tsp baking powder
3/4 tsp xanthan gum
5 Tbls cooking oil (next time will try replacing with some applesauce)
1 Bls vinegar
1 tsp pure vanilla extract
1 egg white (again.. going to try to do 2 egg whites)
1 cup water

Mix all dry ingredients in a bowl. Add all liquid ingredients and mix well. Bake in greased 9" square pan at 350 F for 30-35 minutes or until toothpick comes out clean. DELICOUS!

GF Apple Crisp

As I mentioned before my mom just went gluten free and I wanted to surprise her with one of her favorite treats. This was a good recipe and will stay on the top of my list!

6 cups of apples sliced
1/2 cup sugar
1 tsp cornstarch
1/2 cup evaporated milk
1 cup quick cooking oats
1/3 cup tapioca starch
1/2 cup brown sugar
1/2 tsp salt
1 tsp cinnamon
1/3 cup buter melted
1/3 cup evaporated milk

Placed sliced apples in 8x8 baking dish. Mix sugar and cornstarch together, stir in evap milk pour over the apples. Mix the oats, brown sugar, tapioca starch, salt and cinnamon together. Stir in the butter and mix until crumbly. Spread mixture on top of apples. Spoon a little more evaporated milk over the mixture. Bake at 325 for 60-70 minutes until apples are tender.

Gluten Free Carrot and Oatmeal Cookies


I adapted this recipe from a WIC recipe that I saw and HAD to try. I LOVE carrot cake but don't always like making it. THIS.. I can do plus it is a healthier treat for the kiddos and me!
2/3 cup butter or margarine (I used less...maybe 3Tbs the butter i have has no measurements on it... Sams Club brand.. can you work on that please)
2/3 cup sugar (next time I would like to do half of this in sugar and half in maple syrup)
1 tsp vanilla
1 egg white
1/2 cup white rice flour
1/4 cup tapioca flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
4 oz baby food carrots
1 1/2 cups oatmeal

Heat oven to 350 degres. Cream margarine/butter, sugar and vanilla. Add flours, baking soda, baking powder and salt. Mix in baby food, oatmeal and egg whites. You could also add nuts or rasins if you want but my family is not a big fan of them in cookies. Drop by spoonfulls onto a cookie sheet and bake for 12-14 minutes. The recipe said to frost if desired but man, I don't think they need it!! DELICIOUS and definatly a keeper!

Gluten Free Chocolate Cake in a Mug

Prior to cooking. I put some Marshmellows in it. After cookingAll of us sharing and chowing down!!
1 Large Coffee Mug
2 Tbls Rice Flour
2 Tbls Tapioca Flour
4 Tbls Sugar
2 Tbls Cocoa
1 egg
3 Tbls milk
3 Tbls oil
3 Tbls chocolate chips (optional)
Splash of vanilla

Add dry ingredients in a mug. Add egg and mix. Add milk, oil and vanilla. Mix in chocolate chips. Cook for 3-3 1/2 minutes. Put plate under it as it may rise up over top of mug. Serves 2 people. You can frost this but really delicious without as well!

Gluten Free White Cake

I am gearing up for Jenna's Birthday party in May and have been searching for a bithday cake that I can make that EVERYONE can eat and no one will care if it is gluten free. THIS MAY BE IT! Jenna wants a Nemo cake and after taste testing this recipe I found from baking beauties it is my #1 choice! ENJOY!!!!

2 eggs
1/3 cup skim milk
1 tsp vanilla
1/4 tsp almond flavoring
6Tbls Canola oil (I only had 1 Tbls in house so used 5 Tbls more of applesauce)
1/2 cup white rice flour
1/3 cup plus 1 Tbls tapioca flour
1/3 cup potato starch
1/4 tsp xanthan gum
3/4 cup sugar
1/2 tsp salt
1 1/2 tsp baking powder
2 Tbls rainbow sprinkles (make sure gluten free)

Preheat oven to 350 degrees. Spray 10 muffin tins or 8x8 pan with non stick spray. Mix first 5 ingredients in a bowl and set aside. Mix together remaining ingredients. Stir in flours to the wet ingredients and mix only until combined. Scoop into muffin tins or pour into bowl. Bake in preheated oven for 18-20 minutes for muffins or 30-35 minutes for cake or until toothpick comes out clean in the center of the muffins or cake. Let cool. Frost and ENJOY! PLEASE NOTE. Be careful of commercial frostings. Not all have gluten in them but a lot do. I used my cream cheese frosting and it was amazing!

Gluten Free Chocolate Chip Cookies

These are a very good cookie IF you like a soft cookie like I do. I brought these to my mom who is new to being gluten free and she liked them as did my kids and nephew and husband. I adapted this recipe from the Land o Lakes website.

1 cup white rice flour
3/4 cup tapioca flour
1/2 cup of potato starch
1 tsp gluten free baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp xanthan gum
3/4 cup butter
3/4 cup firmly packed brown sugar
1/2 cup sugar
3 eggs
2 1/2 tsp vanilla
1 pkg (2 cups) chocolate chips (m&m's would be good too)

Heat oven to 375. Combine dry ingredients and set aside. Beat butter and sugars in mixer until creamy. Add eggs and vanilla. Beat in flour mixture on low until all is combined. Stir in chocolate chips. Drop dough by cookie scoop or spoonful onto greased pan. Bake for 9-12 minutes or until browned. Do not overcook. Let stand for a couple of minutes and then remove from sheets.

Gluten Free Potato "Chips"

Ok, this is a no brainer, no frills recipe. I love potatos and am trying to find ways for the kids to like them too. We have tried homemade french frys, mashed potatos, grilled potatos, baked potatos, boiled potatos... sounds like the movie Forest Gump talking about shrimp. I decided to try potato chips. I sliced the potatos thin, tossed them in olive oil and put season salt on them. We vbked them in the oven at 450 until they turned brown on the one side then flipped them until they were brown on that side. Verdict... they were GREAT! Times vary so just watch until they are brown.

Gluten Free Apple Muffins


Awe.. the smell of sweet success. Actually it reminds me of the saying "Don't reinvent the wheel". Jackson and I love muffins and especially apple muffins. I think often of the days when I had the HUGE muffins from Perkins.. YUUM! Well, I tried a recipe yesterday and it was a DISASTER. Didn't taste horrible but just didn't taste. So, back to the drawing board... or is it! We love the apple cake soo much that I decided to make them into muffins! It worked, well, kind of. I put too much batter in each so it didn't rise as much in the middle and I had to cook it a bit longer than I should but next time I will be making these again with a bit less batter in the tins. I made a cream cheese/powder sugar frosting and it is DELICIOUS!!!!
See apple cake recipe posted earlier (I did lessen the sugar to 1/2 cup white sugar and added 2 Tbls honey)
I also made a frosting for it.
1 block of fat free cream cheese
4 tsp butter
3/4 tsp vanilla
1/8 tsp salt
2 1/2 cups powder sugar (or until the consistancy that you like)

It made a ton of frosting but it stores great in the fridge or freezer.

Gluten Free Fried Rice


I LOVE fried rice. Here's the thing. I don't eat it at restaurants because I don't know what they put in it. Well, a girlfriend of mine gave me her recipe and I just adapted it to our liking. I am winging it as I type because I just added a bit of this and that. It was DELICIOUS! This meal was AMAZING! I marinated steak in teriyaki sauce/liquid smoke all day. (Tip, stab the heck out of the meat to tenderize it). The shrimp was just boiled. It was an AMAZING MEAL!!
2 cups of rice (I used brown rice. NEEDS TO BE COLD so cook the day prior)
4 Tbls soy sauce
1/4 tsp sesame oil
3/4 cup green onion
1/2 cup onion
3 Tbls canola oil
1 cup of pork (cut into small pieces)
3 eggs - slightly beaten
salt
pepper
Heat the oil in a fry pan until hot. Add onions,peas and any other veggis and cook for 3 minutes. Push to the side add rice and let cook. don't mess with it too much or it will get mushy. Make a well in the middle of the rice and add the eggs. Let the eggs cook until it is set. Mix the rice and eggs together, add the soy sauce and sesame oil. Toss until mixed. This was just as good the second day heated up as the first!

Gluten Free Jello Popcorn Balls

I thought these would be fun for Easter. We are going to make various color easter eggs for Jacksons classmates. This is such a simple recipe. Very sticky, but easy!

10 cups of popcorn (I buy huge bags of kernels and pop them in the microwave in a paper bag)
1 cup of light corn syrup
3/4 cup of white sugar
1 box of jello (any flavor you want)

Pop the popcorn and set aside. I try to get all the unpopped kernels out so that the kids don't bit into the popcorn balls and hurt their teeth. Melt together in a pan the corn syrup, white sugar and jello. Keep stiring until it comes to a boil. Remove from heat and pour over the popcorn. Mix it up quickly to cover all the popcorn. Wet your hands with cool water and start to form the popcorn into balls. You want your hands damp but not "wet". Get a little damp inbetween making each ball. I put the balls on wax paper until they firmed up a bit. I thought these were very sweet but Jackson loved them!

Gluten Free, Lower Fat Peanut Butter Bread

I was just searching for new ideas on the internet (as I do quite a bit) and came across this bread. I LOVE banana bread but wanted something a bit different. This was the ticket. I modified it to our liking and it turned out great. It is a denser bread but amazing none the less!!!

Modified from recipe found on recipezaar

3 very ripe bananas
2 tsp vanilla
1 cup of egg whites
3 Tbls unsweetened applesauce
3 Tbls peanut butter
2 cups oats, blended to turn it into a flour texture (I used my magic bullet)
1/4 cup maple syrup
1/2 cup of white sugar or splenda
1 tsp baking soda
1 1/2 tsp baking powder
nuts, chocolate chips, flax seed.. what ever else you want.
Next time I may add a Tbls of honey too.. yumm!!

Mash bananas in a bowl or squeeze them out of the skins. Add next 4 ingredients and mix. Add the remaining ingredients and blend until smooth. Pur iinto greased loaf pan. Bake at 350 for 50-60 minutes (mine was closer to 1hr 5 minutes). Let cool before cutting... um.. couldn't wait that long!! I am sitting here eating a piece as I type.. DELICIOUS!!!

Gluen Free Egg Bake

I love breakfast foods as I have mentioned many times. An egg bake is a wonderful and easy meal to make and can be gluten free. You can change the ingredients to suit your familys likes. Be creative... enjoy.

1 dozen large eggs
Skim milk
4 slices of gluten free bread (see prior recipe)
1 bag of shredded cheese (flavor of your choice)
1 lb pork sausage
Salt and pepper to taste

This is really a toss and mix recipe. Turn oven to 425. Greese pan and place bread in bottom. Mix eggs and milk (I just pour in until it looks right.. maybe 1/2 cup). Whip that up until light and fluffy. Pour on top of bread. Add meat and veggies of your choice then top with cheese. (we use about a half a bag of cheese though my hubby would love if I used it all). Bake for 1 hour or until it is cooked all the way through. Let cool a bit and enjoy!!

Gluten Free Special Chex Bars

So who doesn't like an ooey gooey Special K Bar every now and again. I was mistaken when I thought that rice krispies were gluten free.. then I thought that special k and corn flakes were gluten free. WRONG. SO, what do I always turn to. CHEX! I had an open box of rice and corn chex and whipped these up one morning with my partner in crime.. Jenna

6 cups of Rice/Corn Chex. Honey Nut would be AWESOME
1 cup light corn syrup
1 cup peanut butter
1/2 cup white sugar
1/2 bag of chocolate chips
1/2 bag of butterscotch chips

Put corn syrup, peanut butter and white sugar into microwave bowl and heat for 30 second intervals. Stir after every 30 second interval. Continue until it is fully melted and just bubbling. Pour melted mix over the cereal and stir to incorporate. Put the chocolate chips into a bowl and heat in microwave for 30 second intervals until melted. Again mix at every 30 second interval. Pour melted chips over the bars and let cool.

Gluten Free Smoothie



Sometimes we get soo caught up with what we can create or make that is gluten free and we forget about the simple things. One day Jenna and I were ready for a little afternoon snack and I said, what about a smoothie! YES! So that is what we did. I didn't have anything fancy on hand as you will see but that is the fun part. Be creative. Use what you have.
Fill cup with ice
4 frozen strawberrys
Cherry Juicy Juice (filled enough to cover ice)
1 tube of frozen blueberry gogurt
Blend it all together and enjoy!! This was a great treat for me and Jenna to share! We also shared some tropical chex mix..

Gluten Free Apple "Cake"


I have a ton of frozen apples and wanted to make something with it. This is apple cake. It is really a great bread, put into a pan and called "cake". You could frost it if you want but I chose to put powder sugar on it. At first I sprinkled it with what I thought was powder sugar but turned out to be rice flour.. YUCK. So I blew as much as I could off and topped it heavily with powder sugar. Well, I hit it out of the park with this one.. it was DELICIOUS and was still moist and wonderful 2 days later!
3/4 cup of rice flour
1/2 cup potato starch (not flour)
1/4 cup tapioca flour
3/4 tsp xanthan gum
1 tsp baking soda
1 1/2 tsp baking powder
1 tsp cinnamon
2 tsp vanilla
1/2 cup butter
3/4 cup white sugar
2 Tbls honey
3 Tbls brown sugar
2 Eggs
3 Tbls Milk
1 1/2 cups apples. Cubed, shreaded or otherwise.
Icing of your choice
Preheat oven to 350. Grease 9 inch springform pan or 8 inch cake pan. In medium bowl whisk together all dry ingredients EXCEPT sugars. In mixer bowl cream butter until smooth. Add egg and continue to beat. Add both sugars and beat well. Blend in the milk. Beat flour in slowly until fully incorporated. When mixed well take off of mixer and fold in apples. Pour batter into greased pan and cook in oven for 40-45 minutes (mine took way over 55 minutes) until a toothpick comes out clean in the center. Let cool and top with what ever you please. Powder sugar was awesome.. Cream cheese frosting would be AMAZING!

Gluten Free Bagels

I LOVE LOVE LOVE Bagels. I used to eat them all the time. Panera is one of my favorites! I saw a recipe for bagels and HAD to try it! Well, it was worth it as these are amazing. No, they are not panera bagels BUT they are going to fill that need for me when I just HAVE to have a bagel with cream cheese!

2/3 cup lukewarm skim milk
2 Tbls yeast
2 tsp sugar (plus dump a bit in the boiling water)
2 Eggs
1 cup potato starch
1 cup tapioca flour
1/2 cup cornstarch
1/2 tsp baking soda
2 tsp baking powder
2 tsp xanthan gum
1 tsp salt (plus put some in the boiling water)
1/2 tsp cider vinegar (I forgot this but it still worked out. I would use though)
Preheat oven to 375 and put a pot of salted/sugar water on to boil. In a large bowl, combine milk, yeast and sugar. Stir well to dissolve yeast. Mix in eggs. Add remaining ingredients. Mix well to remove all lumps. (I always do in the mixer for a few minutes to get some air into the batter).
Divide dough into 6 portions. (use the middles of them to make an additional bagel. I got 7 out of this) Press into a round shape and use something to cut a hole in the middle. Remember these rise and expand so make the hole larger.



Gently place bagels into the boiling water. Boil bagels for approx 1 minute each (do them seperatly). Remove them from the water with a large spoon that has holes in it.



Place on a greased baking sheet. If desired brush with egg wash. Bake in oven for 15-18 minutes until golden brown!

YUMMMMMMMMMMMMMMMMMMMMMMMMMMM!!!!!!!! I will be freezing these and taking them out as needed for sure!



Nutrition Facts- 1 bagel. 277 calories and 2.9 grams of fat..1.2 sat fat. I think this is about right but this was based off of one bagel and I had 7 here.. plus I changed the ingredients to skim milk and changed out the flours a bit.. Either way it is a bagel.. not something you want to eat all the time but nice for a treat!

Gluten Free MOTHERLOAD!!!




This is the GLUTEN FREE MOTHERLOAD!!!!! I was able to stop at the asian market in Fargo and yes... I am sooo excited! I got 6 bags of potato starch, 7 bags of tapioca flour, 3 boxes of sweet rice flour, 9 bags of rice noodles and rice spagetti noodles... along with 12lbs of white rice flour..... HOW MUCH YOU ASK!!! In the store you would pay $3.50 for one bag of tapioca flour, $3.25 for one bag of potato starch, $3.75 for one box of sweet rice flour, $3.25 for one bag of rice noodles and roughly $12 for 4lbs of white rice flour. Add that up... well, I got all of this for..... $41.32!!!!!! Whoot Whoot... What did I do to celebrate... made some of our favorite white bread so that we can have egg bake and french toast this week!! Oh, and the HUGE TUB of honey is from the inlaws.. THANK YOU SOO MUCH as I use a TON of honey in my recipes esp the granola bars!!! YUM!!!


Gluten Free Tropical Chex Mix

What's a girl to do when she NEEDS something sweet, has given up candy/treats for Lent and still wants to eat "healthy". Tropical Chex Mix. It is a mix of crunchy, sweet and has some healthy components to it. I just threw in the remainder of the fruit/nut mix that I had from Walmart. I didn't have the banana chips or macadamia nuts so I just omitted that.

8 cups Rice chex cereal (I used a mix of kix, chex and king vitamin)
1 cup shredded coconut
1 cup dried banana chips
1 package dried tropical fruit mix (7oz)
1 jar (3oz) macadamia nuts
3 Tbls butter
1/4 cup brown sugar
1/4 cup frozen (thawed) pineapple or orange juice concentrate.

In LARGE microwave safe bowl mix cereal, coconut, banana chips, tropical fruit mix and nuts. In smaller bowl melt butter. Stir in brown sugar and juice concentrate. Mircrowave uncovered on high for about 30 seconds until hot. Pour over cereal mixture, stirring until evenly coated. Microwave uncovered on high 6-8 minutes, stirring every 2 minutes until mixture begins to brown. (took me 6 minutes). Spread on wax paper or foil to cool. Store in airtight container.

Can be done in the oven too. Heat to 300 degrees. Follow same directions but cook for 30 minutes stirring after 15 minutes.

A guide to food buying for the newby Gluten Free Gal or Guy!

My mom and sister are both trying to go gluten free. They have constant headaches and Migraines and were ready to give it a try. My mom is about 1 week gluten free now and she said she is feeling GREAT! My sister is getting into it slowly and I will be making her gluten free meals this weekend to show her it is not tough and it is good! I thought I would put together a list of things that I wish I had when I first went Gluten Free. You will need these for most recipes.

Tapioca Flour (Tapioca Starch is the same)

Potato Starch (Potato Flour is different)

Oats

It seems overwhelming at first but once you get it all it is not soo bad. YES it is more expensive than buying normal flour but you will feel soo much better that you will figure a way to keep it in your budget. I get some of my flours (white rice, sweet rice, tapioca, potato) at the asian market for DIRT CHEAP. The rest of the items are either at the supermarket or Amazon.com is great for speciality flours!! I also bought lock n locks from QVC since I wanted my products to stay fresh.

Gluten Free Chicken Parmesan

I wanted to make something with Chicken and after going through the church cookbook I came up with this. I just modified it to work with a Gluten Free Diet. The result was great! Everyone in the house loved it and will remain on our menu.
4 boneless, skinless chicken breasts (thawed)
4 eggs, slightly beaten
3 cups of crushed rice or corn chex cereal
Seasoning of your choice. I use parmesan and garlic salt.
1 Jar spagetti sauce
1 cup shreaded mozzarella cheese
Preheat the oven to 400. Dip the chicken in the beaten egg. Roll chicken into the crumbs/seasoning. Place in a greesed 13x9 glass baking dish. Bake uncovered for 20 minutes. Take out and pour spagetti sauce over chicken. Bake an additional 10 minutes or until chicken is done in the middle. Top with cheese the last 5 minutes of cooking.
I served this with corn rotini noodles. It was DELICIOUS!!!

Gluten Free Cinnamon Rolls- Cream Cheese Frosting


I have tried about a half dozen various recipes to make cinnamon rolls and had yet to find one that suited my sons picky tastebuds.... UNTIL TODAY! DELICIOUS!! I will NOT be making these a lot because there are a few steps... I was up at 5:30am making them so that we could have them before church. I did freeze 5 so once I cook them up I will post my pictures of them. WORTH THE TIME AND EFFORT for special occations. I plan to make them when I have time one day and cut and freeze them so I can take out one or two when needed.

Dough
2 Tbls butter
1/4 cup white sugar
2/3 cup skim milk, warmed
1 Tbls yeast
1 large egg
1/4 cup canola oil
1/4 cup potato starch
3/4 cup corn starch
1/2 cup millet flour
1/4 tsp baking soda
2 1/2 tsp xanthan gum
1/2 tsp salt
1 tsp vanilla

Filling
1 cup packed brown sugar
2 1/2 tsp cinnamon
1/3 cup butter
(I have to tell you I just sprinked cinnamon and sugar on the inside... I didn't make this filling but I be they would be even better if I did)

Icing
8 tsp butter, softened
1 1/2 cups powder sugar
1/4 cup cream cheese, softened
1/2 tsp vanilla
1/8 tsp salt

*Dissolve yeast in large mixing bowl with warmed milk.. let bubble.
*Add sugar, butter, oil, and vanilla to milk/yeast. Stil
*Sift together salt, potato starch, cornstarch, millet flour, baking soda, baking powder, and xanthan gum.
*Slowly add flour mixture to mixing bowl and stir to combine.
*Remove dough from mixing bowl and place in greesed container and put in warm oven (warm to 200 degrees and turn off). The dough is very sticky. Let rise 45minutes
*Roll dough out between two pieces of wax or parchment paper. Roll to your desired thickness.
*Remove top sheet of paper from dough and spread on some butter.
*Sprinkle on topping mixture.
*Using bottom sheet of parchment paper as an aid, roll the dough into a log.
*Cut into the sizes you desire. Make sure they are not too thick to cook all the way through.
*Put into a greesed dish and give space to allow for them to expand. You can set aside at this point and let them rise a bit more.
*Heat oven to 400 degrees. Bake for 18-20 minutes until tops are brown. Check by running knife between rolls in center. Dough should not stick.
*While rolls are baking make frosting.
*When rolls are done, top with frosting and ENJOY!!!!

Frosting and rolls freeze well so make what you will eat and freeze the rest.

Gluten Free Granola Bars


I love making these. They are wonderful to have on hand as a "healthier" snack than cookies and I feel better about feeding these to the kids than store bought. I control the ingredients. These show chocolate chips in them but they are from last year. I just made a batch today and omitted the chocolate chips because we gave up candy for lent. In its place I added extra coconut and assorted nuts. They are delicious! Thanks Tonya for the recipe!
1 cup brown sugar. They are sweet so Tonya suggested using 3/4 cup and that is what I do.
1/2 cup honey
2/3 cup peanut butter
1/2 cup butter
2 tsp vanilla extract
3 Cups quick oats
1/2 cups sunflower seeds
1/3 cup wheat germ or ground flax
2 Tbls seasame seeds
1/2 cup coconut
1 1/2 cup chocolate chips
Mix first 5 ingredients until smooth. Mix in rest of ingredients and bak in a 9X13 inch pan at 400 for 15 minutes or until done. Cool to room temp before trying to cut. They are delicious!

Gluten Free Black Bean Soup



I love Black Beans, well, any kind of beans. Black bean soup reminds me of going to Panera Bread in the cities with my BFF Tracy. We used to do that and sit there and eat great soups, munch on delicious bread and enjoy our "talks". I found this recipe and changed it a tad to suit my liking!
2 cans of condensed chicken broth
3 cups of water
4 cans (15oz) black beans, undrained
1 can of diced tomatos with peppers
1/2 tsp cumin (I like more in mine but season to taste)
In a blender puree 2 cans of the black beans until smooth. Pour into soup pot along with water, other two cans of undrained black beans and chicken broth. Stir in tomatos (can use salsa too) and cumin. Simmer for 10 minutes. Serve with shreaded cheese, green onions and sour cream! YUM! I also used the soup for a topping on my taco salad. I just drained the liquid off.

Gluten Free Chex Mix

Snacking. We tend to do that more in our house than big meals. I love sweet items but also want the good ole fashioned crunchy, munchy superbowl type snacks. I just made this mix a few days ago and really like it. It is a modified version of the "origional" chex mix. Happy Snacking!

4 cups Corn Chex
4 cups Rice Chex
1 cups Kix
1 cup mixed nuts (I did not have any)
1 cup rice crackers (broken into bite size pieces)
5 Tbls butter
2 Tbls Worcestershire sauce
1 1/2 tsp season salt
3/4 tsp garlic powder
1/2 tsp onion powder

In large microwave bowl, mix cereals, nuts and crackers. (could also use any gluten free pretzels but I am too cheap to buy them). Set aside. Melt butter in smaller bowl. Stir in seasonings. Pour over cereal mixture and stir until evenly coated. Microwave entire mixture uncovered on high 5-6 minutes and stir every 2-3 minutes. Spread on paper towels to cool. Store in airtight container.

Oven - Heat oven to 250. In ungreased large roasting pan melt butter in oven. Stir in seasonings. Gradually add remaining ingredients until evenly coated. Bake 1 hour stiring every 15 minutes. Cool on paper towels and store in airtight container.

Gluten Free Breakfast Burritos


I love breakfast foods.. LOVE. My sister used to make breakfast burritos for me when I would come over and I have not made them in a long time. Well, thanks to the help of corn tortillas I made them last week and we all loved them! It goes to show you that gluten free doesn't have to be all hard work.
Corn Tortilla - heated in microwave for 15 seconds on each side until warm and pliable.
Grilled Egg. I take eggs and milk.. pour them onto a hot griddle and once cooked on the bottom cut with your spatula and fold over into a rectangular shape. Flip and cook other side.
Grilled Bacon.
Cheese
Put all items on the warmed tortilla and heat for another 10 seconds. Wrap and eat!!!

Gluten Free Pizza Crust


This is the dough when mixing it.
This is the dough on the stone.. I use a lot of white rice flour here to get it so it doesn't stick when I roll it.
Prior to rolling the corners under but after using the rolling pin to roll it out.

After rolling the sides under, letting it rise in oven that was set at 200 degrees and then turned off.
DELICIOUS... that is all I have to say about this!! I went to Disney and had a gluten free pizza there.. I am sorry but they have NOTHING on my GF pizza!! YES.. it is a process just like any GF item that is made. You cannot just open a package and dump in water and cook... but really I do believe (ok.. this is kinda corney) that I put a little love in everything I make for my kids and myself. It is a lot of time and effort but well worth it when you NAIL a recipe like I have this one!

I am not ready to post this recipe yet as I am going to pursue a little idea first!! :)
